Banana Oatmeal Bread

 1 cup packed brown sugar
7 tbls. vegetable oil
2 large egg whites
1 large egg
1 1/3 cup mashed ripe bananas (about 2 large ones)
1 cup oats
1/2 cup milk
2 cups flour
1 tbls. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
Cooking spray

Preheat the oven to 350 degrees. 

Combine the brown sugar, vegetable oil, egg whites and egg in the bowl to your mixer.  Beat well. 

Combine the mashed bananas, oats and milk and add to the sugar mixture and mix well. 

  Combine the flour, baking powder, baking soda, salt and cinnamon in a bowl and stir with a whisk until well incorporated. 

Add the dry mixture to the rest of the ingredients in the mixing bowl and mix until moistened. 

 

Spoon the batter into a 9″x5″ loaf pan coated with cooking spray.

   

Bake for 1 hour and 10 minutes or until a wooden pick inserted in the center of the loaf comes out clean.

Let cool on wire rack for ten minutes and then remove from pan and let cool completely.
