


4 eggs 1 cup all-purpose flour
1 cup cottage cheese 2 tbls. sugar
1/2 cup milk 1 pinch salt
1 tsp. vanilla 3/4 tsp. baking soda
2 tbls. butter, melted 1 tsp. cinnamon
1 peach shredded*
*Can you any fruit of your choice. I used sliced strawberries because I had some on hand and they turned out well.
Mix eggs, cottage cheese, milk, vanilla, butter and peach in a large bowl. combine flour, sugar, salt, baking soda and cinnamon in a small bowl. Stir the flour mixture into the cottage cheese mixture until just combined.
Heat a lightly oiled griddle over med-high heat. Drop batter by 1/4 cup measure onto griddle and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side. Repeat with remaining batter.
Yield: 1 dozen pancakes using 1/4 cup measure.
