Fry Pan Chili

Come and get it…breakfast is ready!  Did I say breakfast?  Oh, yeah!!!  You haven’t had a breakfast like this before.  Fry Pan Chili you say!  Yup…and, dang good chili it is.  Just give it a try.  DD Little has done it again.  This recipe is from his  Cowboy Food Cookbook.

 1 1/4 cups instant hash brown potatoes
1 lb. lean beef steak, shredded (I used “chili grind” lean)
2 tbls. your favorite steak sauce
2 cups spring water
1/2 cup coarsely chopped yellow onion
1/4 cup chopped green pepper
1 cup tomato sauce
“No-salt” to taste (salt substitute)
Ground black pepper to taste
1 oz. California chili powder or to taste
1/2 cup chopped fresh mushrooms

 

In a large skillet, cook potatoes in water until tender.  Drain and push to one side.   Add steak and steak sauce and brown them. 

 

Drain any excess fat and add remaining ingredients except tomato sauce. 

 

Cook 5 minutes, add tomato sauce and simmer 10-15 minutes.

 

DD Little serves this chili with pickles and crusty rolls or for breakfast with scrambled Egg Beaters.

Bits & Pieces

I’m going to try and describe how incredibly delicious this dish is.  I knew from reading the recipe through that it would be good eating.  I just didn’t know how good it would taste…especially paired up with scrambled eggs, cornbread muffins and a side of sliced tomatoes.

When I made my version, I used a flat iron steak and pulsed it several times in the food processor to get the chili grind referred to in this recipe.  I then used Heinz 57 Steak Sauce and changed the green pepper to a red pepper because of our personal preference.

Pleasant Surprise:  I never knew that they made instant hash browns until I read this recipe.  I’m so happy to find this product.  It just makes sense to carry the little cartons in the RV with us rather than taking a chance on spoiling potatoes. 

I didn’t have California chili powder, so I used regular chili powder…to taste. 

I later sent an email to DD Little asking him about the measurement listed in the recipe.  He said that all the recipes were printed as he received them and were meant to be adjusted to everyone’s personal preference.  Does this man know what most cooks do or what? 

I highly recommend this recipe for your own breakfast, or whatever meal you choose, and I wouldn’t hesitate one moment to serve it to guests.  Be prepared to have your taste buds and stomach satisfied well past lunch.  I can understand why this was good cowboy food.  That cowboy could ride the range for hours and still feel satisfied.  It’s also pretty darn healthy eating too!

On a scale of 1 to 10, with 10 being the highest, I would give this a double 10 for good eatin’ vittles!

    Helen…I’m so excited that someone has tried this recipe in their RV kitchen…which is where I long to be! Soon, I’m hoping. Doing the chili in a Dutch oven sounds so good. I’ve got mine ready to go. Thanks for your comment.

    I just cooked this recipe and served it to friends. We all loved it AND I fixed it in our RV! You’re right. This recipe is good any time. I would love to have a copy of this cookbook so that I can fix some of the different chili recipes in my Dutch oven over a campfire.

    I think I deserve a free cookbook cause I just moved out on my own and I dont want to live off of hamburger helper :)
