Tex-Mex Megas
8 eggs
1/4 cup of milk
1/3 cup of olive oil
4 corn tortillas, cut into ½” strips**
1/2 an onion diced
1 cup of shredded cheese (Cheddar or Monterey Jack)
Salsa
Salt and pepper to taste
In a bowl, whisk eggs together with milk and add salt & pepper to taste. Set aside.
In a large skillet, heat up the oil and place tortilla strips into skillet, cooking until they are golden. Remove the tortilla strips to paper towels to drain any excess oil from them.
Leave some of the oil in the skillet and add the onions. Lightly sauté them for a few minutes.
Add egg mixture and tortilla strips to the skillet, gently swirling them around. Let the mixture cook until set on the bottom and then give a quick stir.
Sprinkle cheese on top of eggs and continue to cook and gently stir the mixture until the cheese is melted and the eggs are cooked. This part goes rather quickly so watch carefully.
Add salt and pepper to taste and top eggs with salsa.
Serves four.
**I used flour tortillas because that’s what we prefer. If you want to stay true to Tex-Mex, by all means use corn tortillas. It’s all up to you.
Side Note: You can add some crumbled Mexican chorizo or bacon to the mix. The field is wide open on what kind of salsa, avocados or other things that delight your senses and make it a real Tex-Mex fiesta.
Warning: This is addictive and can served at breakfast, lunch or dinner. It’s that good!
